Whole Wheat Pizza DoughChristmas shopping is completely overwhelming me. I’m trying to buy everything online so I don’t have to haul two kids out into a busy store and try make decisions while distracted by bunny crackers and diaper explosions. Still, I have no idea what I’m buying most people. I can think of a million things to get myself and my husband, but not our kids or extended family. Wow, do I sound selfish!

I also have my birthday this week. It’s always been kind of rough having my birthday in December because I know this is the only time I’m going to get presents for the rest of the year so I really need to make it count! If I don’t ask for what I really want then there’s no hope of getting it unless I buy it myself (lame).

This pizza crust is not the least bit overwhelming or disappointing. With just a few basic ingredients you can have your own pizza dough that can be used a variety of ways. Throw on some pizza sauce and mozzarella cheese and you have a crowd pleasing dinner. Slather it with ricotta cheese, pesto, and shredded chicken breast and you have a fancy white pizza. Use it to make calzones, breadsticks, whatever you can imagine.

Whole Wheat Pizza Dough

1 cup all purpose flour
1 cup whole wheat flour
1 packet rapid rise yeast
1 teaspoon salt
1/2 teaspoon sugar
3/4 cup hot (120º-130ºF) water
1 tablespoon olive oil

Combine flour, yeast, salt, and sugar in the bowl of a food processor fitted with a dough blade. Pulse to combine. In a measuring cup combine olive oil and water. With the motor of the food processor running, slowly pour water mixture into flour mixture until a soft dough forms. If dough looks crumbly or dry add another small splash of water. Process for one minute to knead the dough. Turn the dough out onto a floured surface and form into a ball. Spray a sheet of plastic wrap with cooking spray and place spray side down on the dough. Let rise for 10-20 minutes or until doubled. Use dough as desired for pizza, calzones, stromboli, etc. Makes one pound of dough.
