Welcome to another week of The Monday Menu! This week’s menu came together via a number of requests.
My dad wants to know how to cook salmon, so I’m trying out a flavorful recipe for that.
We’re also planning on having a friend over for dinner, and since I know she’s a meat and potatoes kind of gal I figured I’d go in that direction. I’ll wait and see what kind of meat looks good once I’m at the grocery store and make a more specific decision from there.
I’ll also be taking dinner to some friends from church who recently had a baby. My pasta bake is a recipe that’s super easy to double, so I’ll only have to prepare one meal to feed both families.
Here’s what I have planned for the week:
Monday – Panko Crusted Salmon with brown rice and sweet potatoes
Tuesday – Pasta Bake with packaged salad mix
Wednesday – Chicken and Black Bean Enchiladas
Thursday – Roast Meat with baked potatoes and roasted broccoli
Friday – Chicken and Broccoli Pasta
Saturday – Breakfast for dinner or eat out
