The Monday Menu 7/23/2012
Welcome to The Monday Menu. We have had a lot of illness and inability to cook in our house in the last week and a half, so I’m feeling a little half-hearted about the menu this week. I figure I need to plan it out anyways, and if food ends up in the freezer then so be it. I didn’t get a chance to make my chicken and rice last week so it’s first up this week. If we’re feeling well enough we’ll be taking dinner to a family who recently had a baby on Wednesday, so I’m looking forward to that. Any suggestions on what I should make them for dessert? Here’s the tentative food plan for the week:
Monday – Chili Lime Chicken with Mexican Rice and corn tortillas
Tuesday – Hamburgers with parmesan potato rounds
Wednesday – Pasta Lasagna with garlic bread and fresh veggies
Thursday – Homemade Pizza with organic packaged salad
Friday – Penne with Tomato, Feta, and Basil with organic packaged salad
Saturday – Pesto Chicken Sandwiches with fresh fruit
What’s on your menu this week?




Recovering from almost a week of visitors in the house, so a menu is a big guess at this point. Also trying to be more reasonable and figure friendly to hopefully lose a few before this body gets out of hand. BORING!
Gotta get in the right mindset.
Dessert…. If you haven’t tried the Bon Appetit Brown Butter Brownies, those are amazing! Tried and true is chocolate chip cookies. I like taking a few baked and then also giving a container of dough with cooking instructions so they can have fresh when wanted.
Monday: grilled chicken, black beans, avacado, tomato (salad style tossed with a lime vinaigrette)
Tuesday: fajita salad
Wednesday: white bean & kale soup, maybe with chicken sausage
Thursday: pizza and salad (spinach dough, chicken, feta, olives, tomatoes)
Friday: peppered thai beef salad
