Spaghetti alla Cici

Welcome to The Monday Menu! Here you’ll find my menu plan for the week. Hopefully it will inspire you to get into the kitchen and cook. Feel free to use some of my ideas or let me know what you’re going to make!

We have a pretty easy week planned with no major events or intrusions on our daily routine. I have a million cans of beans to use up and I’m running out of ideas, so if you have any great bean recipes I’d love to hear them. I also scored my first spaghetti squash at the farmer’s market this week. I’ve been wanting to try this variety for years but never see it in the grocery store. I was super excited to find it, hopefully I can figure out how to cook it. Here’s the full plan for the week:

Monday – Flat Grilled Chicken with potatoes, carrots, and lefse
Tuesday – Spaghetti Squash with garlicky tomato sauce and breaded chicken cutlets
Wednesday – Italian Chicken Panini with grapes
Thursday – Tostada Bar
Friday – Spaghetti alla Ceci with fresh salad

    I LOVE spaghetti squash! Treat it just like spaghetti — bake the squash for an hour, then cut in half and string it apart — toss with tomato sauce and any other pasta add-ins, then top with your favorite cheese :)

    Good one! Totally starting to crave fall foods like hearty squash and stews.

    Beans….
    My fave lately is inspired by my love of mexican, while trying to avoid the gloppy good stuff like white cheese dip, guac, and sour cream. (why?! so good. hungry now. lol) Saute red onion and jalepeno. Add 1 diced chicken breast, cumin and whatever spices you like. Splash in some lime juice. Add a cup of white great northerns and/or black beans. Top with halved cherry tomatoes, diced avacado, diced colored peppers, and cilantro, plus more lime. Yummers! (and pretty and easy for the wkends)
    Also… white bean italian soup with chicken or sausage, white bean and kale soup with or without sausage, hummus, black beans with cous cous tossed with mex ingredients…blanking now. :)

    Monday: mushroom soup, salad in a parmesan bowl
    Tuesday: broccoli soup, salad
    Wednesday: bbq pork tenderloin, roasted butternut squash
    Th: chicken & eggplant parm, mashed cauliflower (my pasta sub until i can get good spaghetti squash!)
    Friday: no idea… pizza or maybe stir fry
