The Monday Menu 8/20/2012

Roasted Vegetable Lasagna

Welcome to another week at The Monday Menu! This week I plan to start some freezer cooking for when the baby comes. I plan to make a double batch of at least one meal each week and freeze one to ease prep time. This is not something I ordinarily do or feel confident in, and I’m hoping its not too soon to start. I’m due in 8 weeks, so I won’t be eating the frozen meals for at least that long. I assume most things keep for at least three months without losing much quality.

Lasagna will be my double this week. I’m also excited to try a couple new recipes. I’m finally getting my camera back after about three weeks in the shop and I can’t wait to get back into taking delicious pictures for you. Hopefully all turns out well. Here’s the plan:

Monday – Turkey Panini with fresh fruit
Tuesday – Chicken Piccata Salad
Wednesday – Roasted Vegetable Lasagna with packaged salad
Thursday – Quinoa and Veggie Stuffed Peppers with dinner rolls
Friday – English Muffin Pizzas with fresh fruit or leftover salad

    That lasagne looks amazing. Yum! Will definitely try.

    This week we’re on the road. It will be a mix of room service in a pinch and whatever I can gather with my 2yo assistant at the nearby kroger and whole foods. An unfortunate splurge on calories I’m afraid. Groan. Any suggestions??

    Here’s my best guess….

    Monday: caprese salad and/or turkey panini (I’m a sucker for arugula and it comes with sundried tomato aioli. sounds like a good gamble)

    Tuesday: pate and brie with baguette, hopefully some veg

    Wednesday: ham, cheese, nuts, veg

    Thursday: ? not sure if we’ll be here or home? pizza (there is a margherita with artichoke pesto. worthy of a try)

    Friday: home sweet home, veg all the way, maybe tomatoes, avocado, beans, cilantro

    Great freezer project. Good luck!

      I love hitting the salad bar at a high end grocery store. So many salad and sandwich options that shouldn’t be too unhealthy! Also, artichoke pesto sounds awesome! I hope you had a good trip.

        Love it. Yes! The olives and interesting pestos (preserved lemon, tomato) along with a baguette were awesome from Whole Foods. Hearty grain bread, fruit, cheeses, ham, nuts were also great. (The room service sucked! lol.) Sooooo ready to be home for hot home cooking with loads of veg!!!
