The Monday Menu 9/17/2012
Even though I’m still posting from my phone I thought you all might appreciate a quick post letting you know what we’re eating this week. The menu came together around my craving for beans. I also have an ambitious plan for getting ready for the baby in the kitchen this week.
On top of the regular meals I have planned I’d like to get some banana bread in the freezer. I’ll also be doubling the pasta dish for the freezer. My sister had her baby a couple of weeks ago(!) so I’m hoping to get her dinner and some dessert this week. Here’s the plan:
Monday – Chicken and Spinach Stuffed Shells with organic packaged salad mix
Tuesday – Chicken Kabobs and couscous
Wednesday – Double Bean Burgers with sweet potato fries
Thursday – Turkey Panini with baby carrots and fresh fruit
Friday – Vegetarian Chili and cornbread

Good stuff! I totally had vegetarian chili on my list this week. It will be an experiment for me. Hoping for a yummy outcome.
Thanks for the posts. It has inspired me to keep a notebook of menus, so I can look back for ideas.
Monday: lamb rogan josh, curried carrots + basmati
Tuesday: acorn squash soup, salad
Wednesday: kale frittata
Thursday: vegetarian chili
Friday: pad thai (chicken)
