The Monday Menu 9/24/2012
Welcome back to The Monday Menu, where you’ll find a menu of what I plan to cook for my family this week. Hopefully it will give you some ideas if you’re struggling with what to make or encourage you to come up with your own menu to save time and money.
This week I’m utilizing sales and free produce collected from family gardens as well as things I already have sitting around my pantry. Its a rather ambitious week again, although it may not be reflected in the menu. I’d like to get a few things made so I have something to blog about after the baby comes without doing all the work of cooking and photographing. I plan to double my chicken enchiladas and the white bean stromboli to freeze for when the baby comes as well. I have quite the stock pile growing in my freezer. Hopefully I will feel free enough to use it when the time comes and not hoard it waiting for a “busier” day.
Here’s the plan:
Monday – Flat Grilled Chicken with baked potatoes and oven roasted asparagus
Tuesday – Penne with Tomatoes, Feta and Basil with buttery garlic herb knots and packaged salad
Wednesday – Chicken and Artichoke Panini with fresh fruit
Thursday – Pesto White Bean Stromboli with baby carrots
Friday – Chicken Enchiladas with Mexican pinto beans

Trying to make more veg options here, for calorie and budget sake.
Monday: “beef” stew (made with roasted baby bellas instead of stew meat)
Tuesday: chicken with grapes and couscous
Wednesday: creamy spaghetti squash soup
Thursday: frittata with a spaghetti squash hashbrown style crust
Friday: red beans and rice
