The Monday Menu 10/1/2012
Welcome to The Monday Menu! It was like pulling teeth trying to come up with a menu this week. Some weeks are just like that. Nothing sounds good and I can’t find inspiration anywhere. The major dilemma was trying to come up with some more freezer meals to have for when the baby comes. I’m up to seven in the freezer currently (you can look forward to a post on everything I’ve prepared and frozen in advance) but I just don’t feel like that’s going to be enough. I decided to double up on chicken tacos and meatloaf this week since those should freeze well and hardly make any more work (or even cost) to make extra. I’m also hoping to get ahead on baking so there are some sweet posts for you after baby is here without me having to mix and photograph with a newborn attached to me, but you’ll have to wait to see what that involves! Here’s the plan:
Monday – Italian Pork Roast with oven roasted butternut squash and roasted brussels sprouts with garlic
Tuesday – Skillet Lasagna with packaged salad
Wednesday – Chicken Tacos and pico de gallo with avocado
Thursday – Chicken and Roasted Vegetable Wraps with fresh fruit
Friday – Cheese Stuffed Meatloaf Burgers with baby carrots
What’s on your menu this week?




Well, you came up with great stuff. That Monday sounds yum. I might have to do that soon. I’m stuck this week too. Hubs out of town a few days and my very picky mother will be here for a visit. Plus, Southern Living and Bon Appetit arrived, so there are too many new things I want to try.
So, who knows what will actually happen, but here’s the prelim plan….
Monday: tomato white bean soup, salad
Tuesday: pizza, salad
Wednesday: spaghetti squash, bolognese
Thursday: lentil potato salad, acorn squash
Friday: empire chicken (Jamie Oliver), cauliflower/tomatoes
