Hummus

Welcome to The Monday Menu! Between the new cookbooks I got for Christmas and our new venture into vegetarianism I’ve been feeling super inspired in the area of meal planning. I had so many things I wanted to make this week that I think I already have next week’s menu planned out too! It always feels good when things fall into place like that.

Some friends offered to bring us dinner on Tuesday, so that day is all taken care of. It will be nice to see them since its been a while. The rest of the week is a combination of new culinary adventures and old standbys. I find its best not to try make all new recipes in a week or I feel overwhelmed.

If this is your first time at The Monday Menu, let me fill you in on how we eat during the week. I only fill in the evening meals because the rest of the week is pretty static. I’m currently addicted to Chobani plain Greek yogurt with honey, pomegranate seeds, and Udi’s vanilla gluten free granola for breakfast. My husband has been making himself egg white and kale omelets lately while the kids usually eat cereal, fruit, or eggs in some combination. For lunch my husband usually has a salad of greens, salmon, lemon, and almonds. I either eat the leftovers from the night before or have a salad myself. If the kids liked what we had for dinner I will usually feed them leftovers as well. If it wasn’t such a hit I give them peanut butter sandwiches with fruit. I find that’s a good way to get them to try new things without feeling like they’re going to starve.

Anyways, here’s the plan for this week:

Monday – Veggie burgers with garlic and herb baby red potatoes
Tuesday – Meal from friends
Wednesday – Penne alla Vecchia Bettola with lettuce salad
Thursday – Layered Black Bean Enchiladas with Mexican millet
Friday – Loaded Grilled Cheese with fresh fruit, hummus, and carrots

    Yum meals!
    Finally found some not-too-offensive fish, so I’m trying to incorporate that this week.

    Monday: white fish, roasted butternut squash
    Tuesday: spaghetti squash, black beans, grilled colored peppers
    Wednesday: salmon, lentils in tomato broth
    Thursday: pizza, salad
    Friday: kale/white bean fritatta
