The Monday Menu 1/14/2013

Minestrone

Welcome to The Monday Menu! As I mentioned last week I’m full of inspiration thanks to some new cookbooks and a renewed focus on vegetables and whole grains. We don’t have much going on this week. I plan to just stay home and work on potty training my oldest son. I’ll spare you the gory details, but so far we’ve had about 50% success. Not bad in my opinion. We just need to stay home and work on it. That gives me plenty of time to cook, which I’m excited about. Here’s the plan for the week:

Monday – Green Island Sandwiches with fresh fruit
Tuesday – Fettuccini Alfredo with broccoli
Wednesday – Minestrone with garlic crostini
Thursday – Tomato Couscous with Capers and Rustic White Beans
Friday – Samosa Stuffed Baked Potatoes with sauteed spinach and tomatoes

    Frosty temps = soup inspiration.

    Monday: white bean and wild rice soup
    Tuesday: cauliflower (“potato” style) soup
    Wednesday: mixed bean chili
    Thursday: pizza
    Friday: broccoli cheese soup

    PS. Intrigued by how you’re doing the samosa baked potatoes. Care to share?

      That’s a lot of soup! The potatoes are basically samosa spiced twice baked potatoes. If they turn out good I’ll try to share next week!

      I got Peas and Thank You and Ina Gartner’s Foolproof. I also checked out a bunch of great vegan ones from the library!
