The Monday Menu 2/4/2013

Spaghetti alla Ceci

How was your weekend? Mine was intense. My almost 2 year old was admitted to the hospital over the weekend for croup. It came on very suddenly and he was having some trouble breathing. Thankfully he was only in the hospital overnight and then allowed to go home. It was especially difficult having to leave him with my husband in the hospital because I can’t be away from my nursing baby. We ended up canceling our super bowl party (not that we care about football anyways, we just like hanging out with our friends) and I somehow ended the weekend with a bowl of Ben and Jerry’s Oatmeal Cookie Chunk ice cream (which, by the way, tastes like an oatmeal cream pie, which is a total win). We’ve been stress and survival eating something major the last few days. I was able to come up with a meal plan for the week and get to the grocery store after all the kids were tucked in bed. We’ll see if I’m able to cook anything in the next few days. My son is still very sick and sad and definitely not wanting to be put down. There’s also the nursing baby and the jealous preschooler. Let’s just say the local burrito house might be getting a call. If not, here’s the plan:

Monday – Greek Fritatta with home fries and roasted red pepper feta scones
Tuesday – Sesame Chicken Skillet with brown rice and green beans
Wednesday – Spaghetti alla Ceci with salad
Thursday – Grilled Veggie Panini with fresh fruit
Friday – Enchilada Casserole

    I hope your week is less stressful & that Cas keeps on feeling better & better! Please let us know if there’s ANYTHING we can do to help… bring you a meal or run some errands or maybe occupy Lola’s time for a little bit (seriously). We’d love to help & I’m sure Lola would love to play with all Ruby’s vegetables again.

    Oh goodness! I hope things settle down for you!
    This is our first week of total vegetarian, so we’ll see how it goes.

    Monday: zucchini risotto
    Tuesday: roasted cauliflower, wild rice
    Wed: black eyed pea salad (w/ quinoa)
    Th: mushroom stew (beef stew style with potatoes, carrots, peas)
    Fri: roasted butternut squash w/ toasted garbanzos
