The Monday Menu 2/11/2013
Welcome to The Monday Menu! Things have been really crazy around here lately but I was still able to make everything on last week’s menu. After one of my sons being hospitalized for croup last weekend he came down with a double ear infection and pneumonia mid-week. Then my youngest son picked up the virus and ended up with a nasty cough and ear infection as well. Now my daughter has the cough too. Needless to say cooking dinner has not been top priority, at least as far as the kids are concerned. I’m pretty sure they think mom needs six arms and magic powers. I just wish they could understand that I can’t hold them and make them something to eat and nurse a baby all at the same time.

This week’s menu reads kind of like a kid’s menu because I was trying to be extra budget conscious. Still, I can feel good knowing that everything I’m making is from scratch and full of whole grain and vegetables. It should all be pretty easy to put together as well, just in case the kids aren’t feeling better or heaven forbid my husband and I get sick. Here’s the plan:
Monday – Penne with Tomato Basil Cream Sauce with salad and bread
Tuesday – Crispy Chicken Fingers with mashed potatoes and oven roasted broccoli
Wednesday – Burrito Bowls
Thursday – Cheese Pizza with veggie pizza sauce
Friday – Angel Hair Pasta with Chile, Garlic, and Lemon

Thursday: black beans, grilled corn and multi-colored peppers, avocado
Friday: kale & black rice gratin
