The Monday Menu 2/18/2013
Welcome to the Monday Menu! I don’t know what my problem is lately but I just don’t want to cook dinner. Maybe I’m feeling a little burnt out, maybe a little bored with the old standbys.
I pulled out my cookbooks this week hoping a new pass through them would give me new inspiration. I was able to pick out a few recipes that I hadn’t tried before. They had previously seemed intimidating or out of our usual tastes. Its kind of fun to see how things change like that, allowing for a new look at old recipes.
I also turned, as usual, to Pinterest for inspiration. I was able to find a couple meals to try that hopefully won’t be too difficult. When I have lazy feeling weeks like this it helps to be super excited about what we’re going to eat. Here’s the plan:
Monday – Greek Mac and Cheese with salad and bread
Tuesday – Chicken Tacos with pico de gallo with avocado
Wednesday – Black Bean Burgers with baked sweet potatoes
Thursday – Slow Cooker Vegetarian Chili with skillet cornbread
Friday – French Onion Soup Sandwiches with fresh fruit

Sounds good! Loving avocados these days. I always forget about black bean burgers. Must remember and put that on my list soon.
Monday: Mushroom bolognese w/ spaghetti squash
Tuesday: Mushroom tofu Laksa (My first tofu attempt!!)
Wednesday: cauliflower red curry soup
Thursday: mushrooms and snow peas in a coconut thai sauce w/ kale rice
Friday: thai broccoli/green beans/cashews
