The Monday Menu 2/25/2013

Welcome to The Monday Menu! I continue to feel uninspired and short on time. I hate when putting together a menu feels like a chore. I think the season is getting to me. I can’t wait to get out to the farmer’s market and pick up some colorful produce. I feel like everything I’ve been turning out of my kitchen has been brown. I need to see some inspiring colors or maybe head to the library and pick up a few cookbooks to get the gears turning. Here’s what I was able to come up with this week:

Monday – Balsamic Sundried Tomato Chicken Sandwich with Parmesan rosemary potatoes
Tuesday – Pesto Chicken Pizza with fresh fruit
Wednesday – Garlic Cream Noodles
Thursday – Tostada Bar
Friday – Lo Mein

    Yes! Can’t wait for spring veg! Was so glad to finally get good kale around here this week.

    Monday: veg burgers
    Tuesday: sweet potato fries, toasted garbanzos
    Wednesday: cauliflower barley salad
    Thursday: kale gratin
    Friday: roasted root veg
