The Monday Menu 3/11/2013
Welcome to The Monday Menu! This week is all about using up things in my cupboard and trying a few new dishes. I picked up The Smitten Kitchen Cookbook at the library last week and its bad news. By that I mean that I want to make everything in it and now I’m going to have to buy it myself. I scaled it down to one or two things I’m going to try each week until its due back. I’m also going to try photograph several recipes this week, including one for the ebook I’m working on(!). You’re sure to hear more about that in the weeks to come. In the meantime I’d love to hear what kind of challenges you face when you work in the kitchen. Here’s my plan for the week:
Monday – Eggplant and Three Cheese Calzone with packaged salad
Tuesday – Chicken Parmesan Baked Pasta with packaged salad
Wednesday – Vegetarian Chili with Moist and Fluffy Cornbread
Thursday – Mediterranean Panini with sweet potato fries and fresh fruit
Friday – Country Breakfast Skillet with pancakes

Smitten Kitchen was a Christmas gift for me, and I totally agree! While i still had guests we made the cheddar swirls. Highly recommend the wild rice gratin. It really turned me on to the whole concept. I’ve made so many different versions now. (also easily done vegetarian)
Monday: spinach, mushroom, eggplant calzone (with tofu “ricotta”)
Tuesday: veg risotto
Wednesday: masaman curry
Thursday: green pea puree w/ garlic toast
Friday: butternut/sun dried tomato calzone
