The Monday Menu 3/18/2013

Welcome to The Monday Menu! I practically had this week’s menu finished a week ago thanks to some inspiration from The Smitten Kitchen Cookbook. I’ll be trying three recipes out of there this week. Hopefully that’s not a terrible idea. I don’t like to try too many new recipes in a week because it can get stressful, but they just look so good! I’m also excited to have an excuse to make a snack later in the week to bring to a baby shower and a treat to bring to church on Sunday. Hopefully I’ll be able to share those with you in the weeks to come. Here’s the plan for the week:

Monday – Crispy Quinoa Bake with ciabatta rolls
Tuesday – Heart Stuffed Shells in Lemon Ricotta Bechamel with packaged salad
Wednesday – Baked Ranchero Eggs
Thursday – Oven Roasted Rice Bowl
Friday – Wild Rice with Kale, Caramelized Onions, and Baby Swiss

    Love the quinoa bake idea. Must try that one soon.

    Monday: veg burgers, oven fries
    Tuesday: peanut noodles (totally referenced an old smitten kitchen post for this one)
    Wednesday: red curry w/ basil (carrots and cauliflower)
    Thursday: quinoa salad (toasted garbanzos, kalamata olives, tomatoes)
    Friday: white beans and kale

    Good luck with the new recipes. I’m sure they will be delish!
