Welcome to The Monday Menu! This week had several sources of inspiration thankfully. I have an unnatural amount of eggs in my refrigerator, so baked eggs for dinner were a given. I made this recipe once before and it is unbelievable. I think it might have even made my husband’s elusive top five meals. If you’re unfamiliar with fontina cheese, you immediately need to go buy some (as well as some fat pants, because you’ll be hooked). I’m also taking dinner to a couple at church that had a baby, which gives me an excuse to make large quantities of food. I’m hoping to make them some peanut butter oatmeal energy bites. They are the perfect snack for a nursing mother. Finally, not listed on the menu is the cookies I need to make for a bake sale this weekend, but hopefully I’ll be able to grab some pictures and share them with you in the next few weeks. Monday – Balsamic and Sundried Tomato Chicken Sandwiches with carrots and grapes
Tuesday – Crispy Quinoa Bake with whole grain dinner rolls
Wednesday – Spinach and Fontina Baked Eggs with ciabatta bread
Thursday – Baked Ziti with packaged salad
Friday – Layered Enchiladas
