Welcome to The Monday Menu! We are in the last few weeks of summer and it feels like a rush to the finish. It seems as soon as September hits in Wisconsin it’s instantly 50 degrees or less every day. I’m trying to enjoy this nice weather while I can.
Last Friday I took the kids to the library and then had a picnic under a tree outside the building. I read them their books while they picked apart their peanut butter sandwiches, and then got to flip through the cookbooks I’d checked out while they ran in the grass. I will definitely miss the fresh air once the cold sets in. I’m looking forward to visiting a playground with friends this week as well as enjoying another outdoor barbecue. Tuesday is also Jeron’s birthday, so there might be a cheesecake in the works!
Speaking of cheesecake, I’m excited to finally share with you that I’m making a spread of desserts (including a two tiered cheesecake!) for a friend’s wedding next month. This is keeping me very busy, but I’m hoping to share with you most of the recipes after the event. In the meantime, I hope you’ll stick with me and hold my hand as I stress out about this major undertaking! There may be more than a few take-outs on the menu as the date approaches…

Monday – Orange Chicken with brown rice and green beans
Tuesday – Shrimp, Hot Dogs, and Cheesecake (Barbecue and Jeron’s Birthday!)
Wednesday – Eggplant Panini with fresh fruit
Thursday – Penne with Tomato, Feta, and Basil with packaged salad
Friday – Stacked Veggie Enchiladas
