Welcome to The Monday Menu! You may (or may not) have noticed my lack of posting this past week. This is a direct result of the major wedding baking happening that I mentioned last week. I’m diving in deep and freezing everything I make in hopes that I’ll be done a week or so in advance, allowing me to sit back and feel good about my accomplishment (oh, and maybe shower before attending the actual wedding). I’m keeping meals super easy this week in anticipation of the oven being occupied by pecan pie bars. My lasagna recipe is huge and should last us a couple meals, so I may not even need to make anything on Friday.
Here’s the plan for the week:
Monday – Leftover Stacked Veggie Enchiladas
Tuesday – Cashew Chicken with peppers and brown rice
Wednesday – Cheesy Baked Egg Sandwiches with oven roasted sweet potatoes
Thursday – Roasted Vegetable Lasagna with packaged salad
Friday – Grilled Bean Burritos
