Welcome to The Monday Menu! Have you had a chance to feel out the new blog design yet? I’m totally loving it. It’s nice to have a space that feels professional and inspiring.
A lot of factors went into this week’s meal plan. Jeron still won’t be around for dinner tonight so we’re enjoying another food he hates – butternut squash. We’re also hoping to have dinner with our beloved friends from LA some night this week but haven’t quite nailed down the day yet, so I may swap meals a night or two. They have requested my pistachio pesto chicken because they are smart and they know when I say it’s the best thing ever I’m not kidding.
I finally went to the farmer’s market on Friday and actually bought something this time. Cas saw a box of butternut squash and begged me to buy some. How can you say no to that?! It definitely solidified the decision to make butternut squash pasta. I also scored some beautiful eggplant and zucchini which I plan to roast into caramelized bliss and serve alongside some chicken and mashed potatoes, inspired by my delicious dinner on Saturday night.
We continue to be crazy busy with band practices, wedding baking, and painting (I’d like to get the lower level done in time for the bachelorette party I’m hosting in a couple of weeks). Let’s just say there’s a frozen pizza (organic, of course) awaiting its tearful and overwhelmed call to action. Will it be this week? Only time will tell.

Wednesday – Loaded Baked Nachos
Thursday – Pistachio Pesto Chicken with whole wheat spaghetti and packaged salad
Friday – Caprese Panini with fresh fruit
