Welcome to The Monday Menu! Fall has arrived, making pumpkin, boots, and hot meals totally acceptable. How are you taking advantage of the cooler weather? I’m sure you’ll be able to find me (wearing a scarf) slaving over a hot stove.
I’m really starting to dig my heels into homeschooling my four year old. The two year old doesn’t have the attention span for most of it, but enjoys sitting and watching any videos involved. I figure he’ll catch on to a few things here or there. For those interested, I’m loosely following this curriculum and using this book. We also use every day experiences to learn things like family values, math, science, and responsibility. We also enjoy searching youtube for answers to questions such as, “How are crayons made?” and, “Why does it rain?” If you’re homeschooling your kids let me know in the comments what works for you!
We have kind of a random week planned with little appointments here or there. I may need to pick up dinner while I’m out on Wednesday, but I’ve planned a meal anyways and can always use it over the weekend. Here’s the plan:
Monday – Spinach and Artichoke Pizza with packaged salad
Tuesday – Skillet Lasagna with packaged salad
Wednesday – Homemade Biscuits with eggs and mushroom gravy, oven roasted veggies
Thursday – Loaded Quesadillas
Friday – Pesto White Bean Stromboli with fresh fruit
