The Monday Menu 9/30/2013

Welcome to The Monday Menu! Last week was super busy, leaving us consuming way too much pizza. I had it on the menu once, we ordered it while I was busy on Wednesday night, and we hit our favorite local place for lunch while out and about on Friday. I’m definitely feeling the need for some fresh, home cooked food and luckily I should have the time for it this week.

I created my menu this week based on flavors I was craving. We went to a parade on Saturday and the smell of brats and hot dogs left me craving ketchup and mustard. There’s no better application than easy bean burgers. I also had capers on the brain and was able to find a nice vegetarian recipe to incorporate them into my pasta. We’re also splurging on two pasta dishes this week because fall has arrived, which is perfect for the rich, slow cooked penne alla vecchia bettola. Here’s the full plan:

Monday – Penne alla Vecchia Bettola with garlic bread and packaged salad
Tuesday – Simple Veggie Burgers with baked sweet potato fries
Wednesday – Linguini with olives, capers, and tomatoes and packaged salad
Thursday – Tilapia with mashed potatoes and oven roasted broccoli
Friday – Black Bean Tortilla Pizzas

    Yummo. Great menu.
    I found inspiration in a Tuscany cookbook this week. New fave find…farroto. I’m also squeezing the life out of summer foods. :)

    Monday: farroto w/ mushrooms
    Tuesday: 5 bean salad w/ horseradish vinaigrette
    Wednesday: nicoise salad
    Thursday: bean spread and tomato salad, baguette
    Friday: marguerita pizza (no chz)
