Welcome to The Monday Menu! I really need to make an effort to be eating better. It’s not that I’m doing terribly, I’ve just slidden into a habit of expecting dessert after lunch, snacks in the evening, and cheese on all the things. Thankfully I’m currently obsessed with all things squash/sweet potato which helps inspire me to healthier meals. My friend Gillian has also been on a very inspiring healthy eating journey (make sure to check out her Weight Loss Wednesdays/What We Ate for the details!), which has been great for motivation.
I don’t usually include a meal for the weekend because I like have some flexibility there, but I’ve been running out of food lately thanks to my ever growing children. I’m going to try planning an easy Saturday meal that can happen any time we need it.
I’m also looking to experiment with some vegetarian Thanksgiving ideas. Hopefully I’ll be able to share the winners with you soon!

Thursday – Butternut Squash and Sage Pasta with grilled shrimp and garlic bread
Friday – Black Bean Tacos
Saturday – Pita Pizzas
