Blueberry Pomegranate Breakfast Parfait is a wholesome, healthy breakfast made of yogurt, honey, fruit, and granola! Made in just minutes, this parfait is naturally gluten-free, naturally sweetened, and easy to make vegan.

Breakfast parfaits are an absolute favorite. While I'm labeling it for breakfast, it can really be an anytime food! Lunchbox treat? Absolutely. Late night snack? Why not.

The word "parfait" might sound fancy, but it's essentially just layers of yogurt, fruit, and granola. Making a parfait is super simple and easy to customize - you can use any fruit and yogurt combination you like.

I love using fresh blueberries, pomegranate seeds, and plain greek yogurt. Something about the sweetness from the blueberries and tartness from the pomegranate seeds is so addictive and delicious. I hope you love it as much as I do!

  • Plain fat-free Greek yogurt
  • Honey
  • Blueberries
  • Pomegranate seeds
  • Granola

How to make a breakfast yogurt parfait

  1. Drizzle a tiny bit of honey in the cup or bowl you'll be serving the parfaits in if you want it to show through on the outside.
  2. Add one spoonful of yogurt and top with a few blueberries, pomegranate seeds, and a spoonful of granola.
  3. Add another spoonful of yogurt, top with another drizzle of honey, and layer on more blueberries, pomegranate seeds, and granola.
  4. Repeat these layers as many times as necessary to fill your serving dish. Serve immediately or keep cold until ready to eat.

Removing pomegranate seeds from a whole pomegranate can be a bit tricky, so I recommend following this easy tutorial on how to cut a pomegranate.

You can also buy pomegranate seeds in the refrigerated produce section of the grocery store, though they are likely more expensive than a whole pomegranate.

The best granola

I discovered Udi's Gluten Free Granola through the Foodie Penpal program a while back and it has been in my pantry ever since. Even though I'm not gluten free, its delicious! I might also recommend using some of my basic granola.

How to store blueberry pomegranate breakfast parfait

You can store breakfast parfaits in the refrigerator for up to 5 days.

Personally, I recommend storing all the components separately and assembling when you're ready to eat so the granola stays nice and crunchy.

Tips for customizing breakfast parfaits

  • Swap the plain yogurt for a different flavor yogurt, like vanilla or strawberry
  • Use any fruit you enjoy in place of or addition to the blueberries and pomegranate seeds such as strawberries, raspberries, or peaches
  • Add mini chocolate chips or chopped nuts
  • Swap the granola for your favorite breakfast cereal
  • Use vegan yogurt to make a vegan breakfast parfait
  • Assemble inside mason jars for an easy grab-and-go breakfast

Can I make this breakfast parfait with frozen blueberries?

Yes, you can totally make this parfait with frozen blueberries. Depending on the time of year, this might be an even fresher tasting option! Simply place the frozen berries in a bowl and cover them with room-temperature water and thaw for about five minutes. Drain, then proceed with the recipe as written.

Are yogurt parfaits healthy?

Yes! Yogurt parfaits are a healthy and delicious breakfast or snack option. They're high in protein thanks to the greek yogurt, and are naturally sweetened thanks to the fruit and honey.
